JRF Asian Meatballs

  • 1 lb 93% or leaner ground beef or turkey
    1 egg slightly beaten
    ½ tsp onion powder
    ½ tsp garlic powder
    ¼ tsp ground ginger
    ¼ cup old fashioned oats
    ¼ cup Yoshidas marinade or Hoisin BBQ Sauce
    ½ cup apple juice or pineapple juice (water can be substituted)

    Combine first 6 ingredients and half of the marinade in a large mixing bowl. Mix well. Form 1” meatballs and set aside. Spray a medium skillet pan with cooking spray. Add meatballs and juice (or water) and cook covered over medium heat. Cook 4-5 min, remove lid and turn meatballs. Repeat this process until they are browned on each side. When juices from meatballs run clear baste each meatball with the remaining marinade, cook 1 minute and turn meatballs and baste again cooking for another minute. Ensure that meatballs are no longer pink in the middle.
    Serve with rice or salad.
